- 1 tablespoon olive oil
- 1 large yellow onion Minced
- 1 clove garlic Minced
- 1 cup quinoa Uncooked
- 1/2 teaspoon salt
- 2 cups chicken broth
- 18 teaspoon black pepper
- 4 cups baby spinach
Directions

1Heat oil in skillet over medium-high heat.

2Add onion and garlic.

3Cook stirring frequently until onion is tender (3-5 minutes).

4Add quinoa to skillet, stirring frequently until quinoa starts to turn golden brown.

6Add broth and pepper to skillet, bring to a boil.

7Cover and reduce heat to low and simmer for 13 minutes, stir in spinach.

8Cover and cook until spinach and quinoa are tender and liquid is absorbed, about 3 to 5 minutes; season with salt.
