Quinoa Banana Bread

Ingredients

  • 2 cups Flour
  • 1-1/2 teaspoon Baking Powder
  • 1/2 teaspoons Baking Soda
  • 1/2 Tablespoons Ground Cinnamon
  • 1/4 teaspoons Ground Nutmeg
  • 2 whole Eggs, Lightly Beaten
  • 3 whole Ripe Bananas, Mashed
  • 1 cube Sugar
  • 1/2 cups Butter, Melted
  • 1 cup Cooked Quinoa, Cooled

Directions

    Preheat oven to 350°F. Spray loaf pans. I used 3 mini loaf pans but you could use 1 egular-sized loaf pan.

    Measure dry ingredients into a bowl and mix together. In another bowl. mix eggs, bananas, sugar, and butter. Mix dry ingredients into wet ingredients. Stir in quinoa.

    Bake for 45-50 minutes. If using a large pan, add 10 minutes.
