  • 2 garlic cloves
  • 2 T balsamic vinegar
  • 1 T maple syrup
  • 1 t dijon mustard
  • 2 t chipotle puree (or more)
  • 1/2 t salt
  • 1/2 t pepper
  • 1/2 c olive oil
  • Tofu cubes:
  • 1 block of extra firm tofu
  • sesame oil/chili oil/olive oil
  • soy sauce
  • curry powder
  • 3 c cooked quinoa
  • 1 cob corn cooked, corn cut off
  • 2 avocados diced
  • 1/2 c sundried tomatoes chopped
  • 1/3 c toasted pine nuts
  • 1 c shredded aged cheddar
  • any other veggies in the fridge
