  • 2 cups Quinoa, Cooked
  • 1/4 cups Fresh Mint, Chopped
  • 1/2 cups Fresh Parsley, Chopped
  • 1/2 cups Dried Cranberries
  • 1/2 cups Chopped Pecans, Toasted
  • 3 whole Scallions, Chopped
  • 1/4 cups Lemon Juice
  • 1/2 cups Olive Oil
  • 1 teaspoon Garlic Salt
  • Salt And Pepper, to taste

Directions

    Prepare quinoa according to package directions. Allow to cool to room temperature. Combine quinoa, herbs, cranberries, pecans, and scallions.

    In a separate container, mix lemon juice, olive oil, and garlic salt. Stir into quinoa mixture. Add salt and pepper to taste.

    Cover and refrigerate at least thirty minutes - several hours is better. Toss again before serving. If the salad seems dry, add additional olive oil.
