Ingredients
- 2 cups Quinoa, Cooked
- 1/4 cups Fresh Mint, Chopped
- 1/2 cups Fresh Parsley, Chopped
- 1/2 cups Dried Cranberries
- 1/2 cups Chopped Pecans, Toasted
- 3 whole Scallions, Chopped
- 1/4 cups Lemon Juice
- 1/2 cups Olive Oil
- 1 teaspoon Garlic Salt
- Salt And Pepper, to taste
Directions

1Prepare quinoa according to package directions. Allow to cool to room temperature. Combine quinoa, herbs, cranberries, pecans, and scallions.

2In a separate container, mix lemon juice, olive oil, and garlic salt. Stir into quinoa mixture. Add salt and pepper to taste.

3Cover and refrigerate at least thirty minutes - several hours is better. Toss again before serving. If the salad seems dry, add additional olive oil.
