- 1 Tablespoon Olive Oil
- 3 cloves Garlic, Minced
- 1- 1/2 cup Quinoa, Rinsed And Drained
- 2- 1/2 cups Vegetable Broth
- 1 whole Heirloom Tomato, Chopped
- 2 whole Small Cucumbers, Quartered And Chopped
- 5 whole Scallions, Chopped
- 2 ounces, weight Alfalfa Sprouts, Torn Apart
- 1/2 whole Lemon, Juiced
- 1 teaspoon Red Wine Vinegar
Directions

1Heat olive oil in a pot over medium heat.

2Add garlic and quinoa and cook 2-3 minutes, stirring occassionally until lightly toasted.

3Add broth or water, increase heat to high, bring to a boil, reduce heat, and simmer, covered 15-20 minutes or until cooked through.

4In a large bowl combine tomatoes, cucumber, scallions, alfalfa sprouts and quinoa.

5Pour lemon juice and red wine vinegar over the quinoa and mix until combined.

6Serve warm or cold.
