- 14 cup vinaigrette (any kind)
- 14 cup red onion, diced
- 14 cup red pepper, diced
- 14 cup yellow pepper, diced
- 14 cup mushroom, diced
- 12 cup quinoa, cooked
- olive oil
- butter
- salt and pepper, to taste
- rosemary, to taste
- thyme, to taste
Directions

1Toss greens with the vinaigrette and let set.

2Saute onion, peppers, and mushrooms in a small amount of olive oil and butter.
