Quinoa Salad

Ingredients

  • 1 cup quinoa
  • 2 cup water
  • 1/4 cup olive oil (I use extra virgin)
  • 2 limes juiced, about 1/4 cup
  • 2 tsp ground cumin
  • 1/4 to 1/2 teaspoons crushed red pepper flakes
  • 1 1/2 cup grape or cherry tomatoes
  • 1/4 cup chopped fresh cilantro
  • 1/4 to 1 teaspoon salt, to taste ( I use 1/4 teaspoon)
  • 1/4 to 1/2 teaspoon black pepper, to taste
  • 5 green onions, finely chopped
  • 1 (15 ounce can) black beans, drained and rinsed (I used reduced sodium)

Directions

    Bring quinoa and water to a boil in a saucepan.

    Reduce heat, cover and simmer until tender and water has been absorbed, 10 to 15 minutes.

    Set aside to cool.

    Whisk together in a bowl the olive oil, lime juice, cumin and red pepper flakes.

    Combine quinoa, tomatoes, black beans and green onions together in a large bowl.

    Pour dressing of choice over quinoa mixture.

    Toss to coat.

    Stir in cilantro.

    Season with salt and pepper if desired.

    Serve immediately or chill in the refrigerator.
