Ingredients

  • 1 cup mixed plain, red quinoa
  • 1/2 chopped red pepper
  • 1 cup shelled edamame
  • 1/2 onion, diced
  • 1/4 cup dried tart cherries
  • vinaigrette:
  • 4 tbl olive oil
  • 4 tbl white wine vinegar
  • 1 tbl dijon mustard
  • pinch sugar-to taste
  • 2 tbl sunflower seeds
  • spinach, arugula and/or watercress (gently sauteed) optional
