  • 1/4 cup Collard or Turnip greens, rinsed and chopped
  • 1 Tomato, diced
  • 1/3 Zucchini or Cucumber
  • 3 tbsp Lemon or Lime juice
  • 1/4 small purple or yellow onion, diced
  • 1/3 cup Quinoa, cooked
  • 1 Salt and pepper to taste

    Cook collard greens and onions by simmering in shallow water for about 10 minutes

    Chop zucchini and halve the slices

    Combine all other ingredients and toss
