- 1/4 small purple or yellow onion, diced
- 1/3 cup Quinoa, cooked
- 1 Salt and pepper to taste
Directions

1Cook collard greens and onions by simmering in shallow water for about 10 minutes

2Chop zucchini and halve the slices
