- 1 buttercup squash
- 1 cup quinoa
- 2 cups vegetable stock
- 12 onion
- 2 cups Baby Spinach
- 12 teaspoon salt
- 12 teaspoon fresh ground pepper
Directions

1Split squash horizontally and scoop out seeds.

2Sprinkle with salt and pepper.

3add 1-inch water to roasting pan, add squash halves, and cover with aluminum foil.

4place in 375 degree oven and cook for 45 minutes.

5Meanwhile, rinse quinoa grain in cold water.

6Saute rinsed quinoa in saucepan for 5 minutes to toast.

7Add chopped onion, vegetable stock and bring to a boil.

8lower heat to simmer and cover.

9Cook for 15 minutes, or until quinoa has absorbed all liquid.

10Remove quinoa from heat; add spinach to quinoa mixture.

11remove squash from oven and fill with quinoa mixture.

12return to oven, uncovered for an additional 10 minutes.
