Quinoa Stuffed Tomatoes

- 1/3 cup quinoa
- 1/4 pound green beans chopped
- 1/4 pound frozen peas
- 1 medium zucchini diced
- 5 tablespoons olive oil
- 2 spring onions finely sliced
- 6 sprigs fresh cilantro chopped
- 8 medium tomatoes tops cut off and insides discarded
Directions

1Preheat the oven to 400°F. Cook the quinoa in boiling salted water as per the package instructions then drain and set aside. Cook the beans in boiling salted water for 3-4 mins, add the peas and zucchini and cook for another 2 mins then drain. Mix with the quinoa, 2 tbsp oil, the spring onions and cilantro. Season.

2Fill the tomatoes with the quinoa mixture, put the tops back on, transfer to a baking dish, drizzle with 3 tbsp oil and bake for 20-25 minutes.
