- 1 cup Quinoa
- 1-1/2 cup Water
- 1/2 cups Onion, Chopped
- 1 whole Tomato, Chopped
- 1 cup Parsley, Chopped
- 2 Tablespoons Fresh Mint, Chopped
- 1/4 cups Lemon Juice
- 1/2 cups Olive Oil
- 2 cloves Garlic, Minced
- Kosher Salt
- Pepper
- 1/4 cups Kalamata Olives, Sliced
- 1/4 cups Feta Cheese, Crumbled
Directions

1Simmer quinoa in water for 12-15 minutes until all the water is soaked up (if all the water is gone before you reach 12 minutes, then add another 1/2 cup of water). Allow to cool completely.

2Place all ingredients except olives and cheese in a mixing bowl and toss together lightly. Chill for an hour or more to allow flavors to blend.

3Garnish with olives and feta cheese.
