  • 12 cup quinoa, rinsed
  • 1 cup vegetable broth
  • 2 cups peas, steamed
  • 1 cup raw chopped cashews, toasted
  • 5 tablespoons soy butter
  • 1 small onion, chopped approx 3/4-1 cup
  • 1 tablespoon dried tarragon

    Cook quinoa with vegetable broth in a small saucepan by bringing to a boil then simmering until all the liquid is absorbed-about 15 minutes.

    If you're a multi-tasker, while quinoa is cooking, heat butter, add onions and tarragon and saute a few minutes until onions are translucent.
