Rabbit Pie

Ingredients

  • 1 rabbit
  • 5 or 6 potatoes
  • 1/4 c. finely chopped carrots
  • 1/4 c. finely chopped celery
  • 1/4 c. finely chopped onions (optional)
  • pie dough (enough for bottom and lid)

Directions

    Cook rabbit with several big slices of onion, salt and pepper until done.

    If rabbit is wild the onion will take away the wildness.

    Remove meat from bones and place in bottom of dough lined pie plate.

    Add potatoes (finely sliced), carrots, celery and onions.
  5. 5
    Top with salt and pepper to taste.

    Add about 3 tablespoons of the broth that the rabbit had cooked in.

    Cover with pie dough.

    Pinch edges to seal and prick the top a few times with fork.

    Bake at 350° for at least an hour or until potatoes are done.

    Also good served with additional broth.
