- 12 lb rabbit tenderloin, cut into bite sized pieces
- 1 onion, chopped
- 1 garlic clove, chopped
- 1 tablespoon olive oil
- 5 slices turkey bacon, chopped
- 12 lb mushroom, sliced
- 2 medium potatoes, chopped
- 8 ounces frozen green peas
- 12 teaspoon thyme
- 12 teaspoon black pepper
- 12 teaspoon dried parsley flakes
- 1 teaspoon salt
- 1 cup red wine
Directions

1Heat olive oil in medium sized pot.

2Add onions and garlic and cook on high heat five minutes, stirring occasionally.

3Add bacon and cook until browned slightly.

4Add mushrooms and continue to cook for one minute.

5Add rabbit pieces and cook 5-8 minutes or until cooked through.

6Add salt, pepper and herbs.

7Pour in wine and cook for five minutes or until wine is reduced.

8Add potatoes and peas and place the lid on the pot.

9Cook 20 minutes or until potatoes are soft.
