- 1 rabbit, cut in pieces
- 1 big onion
- 1 laurel leaf, thyme
- 1 Tbsp. vinegar
- 2 Tbsp. maizena
- 33 cl dark abbey-beer
- 1 c. water
- 2 lumps sugar
- pepper, salt and nutmeg
Directions

1Burnish the pieces of rabbit (with salt and pepper) in butter. Add the beer, water and vinegar.

2Add the cut onion, sugar, thyme and laurel.

3Let it all simmer for about 1 hour.

4Thicken the sauce with the maizena. Serve with boiled potatoes and apple compote.
