- 2 bunches rabes
- olive oil (cover bottom of pan)
- 4 cloves garlic
- red pepper to taste
- black pepper to taste
- 1/4 c. white wine
- salt (if desired)
Directions

1Cut stems, and wash rabes; drain.

2Heat garlic, olive oil and red pepper for about 1 minute on medium heat.

3(Do not burn garlic.)

4Add rabes to oil; cover.

5Add a little water;

6stir rabes every few minutes.

7When they are tender, add white wine. Remove cover and let cook just a few more minutes.
