Ingredients

  • 1 1/2 tbsp maple syrup
  • 3 tbsp rice vinegar
  • 1/2 tsp ground toasted cumin
  • 3 cups finely shredded red and/or green cabbage
  • 2 cups finely shredded kale
  • 2 cups sliced red, orange, yellow and/or green pepper
  • 1/2 cup julienned zucchini
  • 1/4 cup shredded carrot
  • 1/4 cup sliced red onion
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup chopped salted peanuts

Directions

    Combine maple syrup, vinegar and cumin. Season. Add cabbage, kale, peppers, zucchini, carrot, red onion and cilantro. Toss to coat. Cover and chill for 1 hour or overnight.

    Toss with peanuts before serving.
