- 1 (3 oz.) pkg. cream cheese, softened
- 1/2 tsp. peppermint extract
- 3 c. powdered sugar, sifted
- rainbow sugar (optional)
Directions

1In a large bowl, with an electric mixer, beat together cream cheese and peppermint extract.

2Add powdered sugar gradually and beat until smooth, kneading the last of the powdered sugar in with hands.

3Form mixture into balls the size of a cherry and roll in rainbow sugar, if desired.

4Place on waxed paper and flatten with a fork.

5Let stand overnight.

6Makes 3 dozen (1 inch) mints. Great for Easter.
