- 1 pkg. yeast
- 1/4 c. lukewarm water
- 1 c. cornmeal
- 2 c. scalded milk
- 1 tsp. salt
- 1/2 c. sugar
- 1/2 c. shortening
- 2 beaten eggs
- 4 to 4 1/2 c. flour
Directions

1Soften yeast in water; pour milk over cornmeal, salt, sugar and shortening.

2Cool.

3Beat in eggs and 2 cups flour.

4Add yeast and mix well.

5Stir in flour.

6Cover and let rise until double in bulk, about 1 hour.

7Stir down; spoon into greased muffin cups.

8Fill about 1/3 full.

9Cover and let rise until double in bulk.

10Bake 15 to 20 minutes at 400°.

11Brush with melted butter.

12Makes about 2 dozen.
