Ingredients

  • 3 14 cups unbleached flour
  • 1 tablespoon sugar
  • 12 teaspoon cinnamon
  • 12 teaspoon salt
  • 12 teaspoon baking soda, sifted
  • 4 ounces raisins (or any small dried fruit)
  • 1 14 cups 2% low-fat milk

Directions

  1. 1
Preheat oven to 425 degrees F. In a large bowl sift together the flour, sugar, cinnamon, salt and soda.
  2. 2
    Mix in the dried fruit.
  3. 3
Make a well in the center and pour most of the milk in at once.
  4. 4
Using one hand, mix in the flour from the sides of the bowl, adding more milk, if necessary.
  5. 5
The dough should be soft, not too wet and sticky.
  6. 6
When it all comes together, turn it out onto a floured board, knead lightly for a few seconds.
  7. 7
Pat the dough into a round about 1 1/2 inches deep and cut a deep tic.tac.toe pattern on it.
  8. 8
Bake in a hot oven for 15 minutes, then turn down the oven to 400 degrees F. and bake for another 30 minutes or until cooked.
  9. 9
If you are in doubt, tap the bottom: if it is cooked it will sound hollow.
