Raisin Bread Pudding

Ingredients

  • 2 1/2 c. skim milk
  • 6 (1 oz.) slices raisin bread, cubed
  • 2 eggs, slightly beaten
  • 2 Tbsp. honey
  • 1 tsp. vanilla extract
  • 1/4 tsp. salt
  • 1/4 tsp. ground cinnamon
  • 1/8 tsp. ground nutmeg

Directions

    Place milk in a large saucepan; heat until warm (do not boil). Remove form heat.

    Add bread and next 6 ingredients; stir well. Spoon mixture evenly into 6 (4 ounce) ramekins or custard cups coated with cooking spray.

    Place ramekins in a 13 x 9 x 2-inch baking dish; add hot water to a depth of 1 inch.

    Bake at 350° for 20 minutes; shield with aluminum foil and bake an additional 10 minutes or until a knife inserted in center comes out clean. Remove ramekins from water. Serve pudding warm or chilled.
