Raisin Cake

  • 1 lb. seedless raisins
  • 2 c. sugar
  • 3/4 c. shortening
  • 1 tsp. cinnamon
  • 1 tsp. cloves
  • 1 tsp. nutmeg
  • 1 tsp. salt
  • 1 Tbsp. baking soda
  • 1 1/2 c. cold water
  • 4 c. flour
  • 1 tsp. baking powder

Directions

    Cook raisins in 2 cups of water for the cake.

    Cream sugar and shortening; add hot raisins.

    Sift flour, spices, salt and baking powder together.

    Add flour and cold water and beat for 3 minutes.

    Add soda dissolved in about 1/2 c. warm water from raisins.

    Pour into oblong pan, greased and lined with wax paper. Bake at 350° for 50 to 60 minutes.
