Raisin Cake

Ingredients

  • 1 c. raisins, washed
  • 2 c. cold water
  • 1 c. sugar
  • 4 Tbsp. butter or margarine
  • 2-1/2 c. flour
  • 1 tsp. cinnamon
  • 1/2 tsp. cloves
  • 1/2 tsp. salt
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 c. chopped nuts, optional

Directions

    Put washed raisins into a saucepan with the cold water; boil for 5 minutes.

    Cool and drain liquid into a measuring cup; add water to equal 1 c., if necessary.

    Cream together sugar and butter.

    Sift together flour, cinnamon, cloves and salt.

    Dissolve the baking powder and baking soda in the reserved raisin liquid. Mix all ingredients together and add nuts, if desired.

    Bake at 350° for 20-25 minutes.
