- 1 c. raisins
- 2 c. water
- 4 Tbsp. tapioca
- 1/2 c. sugar
- 1/4 tsp. salt
- 1 slightly beaten egg
- 1 Tbsp. butter
- 2 tsp. lemon juice
- 1 tsp. grated lemon rind
- 1 (9-inch) cooked pie shell
Directions

1Add raisins to water and cook 30 minutes, drain.

2Add enough water to juice to make 2 cups.

3Combine tapioca, sugar, salt and liquid in saucepan and mix well.

4Bring mixture quickly to a full boil over direct heat, stirring constantly and pour small amount of slightly beaten egg, stirring vigorously.

5Return to saucepan and bring just to a boil.

6Remove from fire.

7Add butter, lemon juice and rind to raisin mixture.

8Cool slightly before filling shell.

9Chill if desired and cover with whipped cream.
