- 2 2/3 c. raisins
- 1 c. granulated sugar
- 1 large beaten egg
- 2 rounded Tbsp. flour
- 2 rounded Tbsp. cornstarch
- 1 Tbsp. vinegar (apple cider)
- 1 tsp. vanilla
- 1 tsp. cinnamon
- pastry for 2 (9-inch) crusts
Directions

1Put raisins in large saucepan.

2Cover with water, plus that amount of water also.

3Simmer until raisins are plump.

4While raisins are cooking, mix together the sugar, egg, flour and cornstarch.

5Pour small amount of hot liquid into the sugar-egg mixture, then gently pour all this into raisins.

6Stir constantly; it will thicken quickly.

7Remove from heat.

8Let cool while fitting crust in pie pan.
