Raisin Pudding

Ingredients

  • 3 Tbsp. butter or margarine
  • 1/2 c. sugar
  • 1/2 c. milk
  • 1 c. flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. nutmeg
  • 1/4 tsp. salt
  • 1/2 c. raisins
  • 1/4 c. chopped walnuts
  • 1 tsp. vanilla
  • 1 c. dark brown sugar (can add 1 Tbsp. molasses to light brown sugar)
  • 2 c. boiling water

Directions

    Cream 1 tablespoon butter with the sugar.

    Add the milk, then the sifted dry ingredients.

    Blend together.

    Mix in the vanilla, then stir in the raisins and walnuts, if desired.

    Spread in the bottom of a 1 1/2-quart casserole dish.

    Mix the brown sugar with the remaining 2 tablespoons butter and the 2 cups boiling water in a saucepan.

    Stir over medium heat until dissolved.

    Pour carefully over the top of batter and bake for 1/2 hour in a 375° oven.

    Good warm with cream or ice cream!
