- 2 c. half and half
- 1 c. cooked long grain white rice
- 1/2 c. sugar
- 1/2 c. raisins
- 2 large eggs, beaten
- 1 tsp. vanilla extract
- ground nutmeg
Directions

1Preheat oven to 350°.

2Butter a 1-quart casserole. In a medium bowl mix half and half, cooked rice, sugar, raisins, eggs and vanilla.

3Pour into casserole.

4Place casserole in a large baking pan, fill pan with boiling water to reach halfway up side of casserole.

5Bake for 40 minutes.

6Carefully stir custard to distribute raisins; sprinkle with nutmeg.

7Bake 30 minutes longer or until a knife inserted 1 inch from edge comes out clean.

8Serve warm or cold.
