Raisin Rice Pudding

Ingredients
- 1 1/2 qt. water
- 1/2 c. rice
- 1 qt. and 1/2 c. milk
- 1/2 c. sugar
- 3/4 tsp. salt
- 1/2 c. raisins
- 3 Tbsp. cornstarch
- 3 medium eggs
- 1 tsp. vanilla
- whipped cream
Directions

1Bring water to boil in large saucepan.

2Add rice.

3Cover and cook until tender.

4Drain rice, rinse with cold water and set aside.

5Place 1 quart of milk, sugar, salt and raisins in double boiler and heat slowly.

6Blend cornstarch with remaining half cup of milk.

7Beat eggs until light.

8Add vanilla to eggs, then stir into cornstarch mixture.

9Slowly add cornstarch mixture to milk mixture in double boiler, cooking and stirring until mixture coats on spoon.

10Remove from heat and fold in rice.

11Chill.
