- 3 Tbsp. butter
- 1 c. sugar
- 3 eggs
- 3/4 c. raisins
- 1 Tbsp. grated lemon rind
- 3 c. flour
- 3 tsp. baking powder
- 1 tsp. salt
- 1/4 tsp. mace
- 1/2 tsp. lemon extract
- 1/2 tsp. vanilla
- 1 c. milk
Directions

1Cream the butter and sugar.

2Add eggs, one at a time, beating well after each addition.

3Stir in raisins and lemon rind.

4Mix and sift dry ingredients.

5Combine lemon extract, vanilla and milk; add alternately with dry ingredients to raisin mixture.

6Pour into greased and floured 9 x 5 x 3-inch loaf pan.

7Bake at 350° for 45 minutes.

8Makes 1 loaf.
