  • 3 egg whites
  • 1 c. sugar
  • 1/3 c. crushed soda crackers
  • 1/2 c. finely chopped pecans
  • 1/4 tsp. vanilla
  • 1 (1 lb.) can peach halves, drained and thinly sliced
  • 1 (8 oz.) carton Cool Whip

    Beat egg whites until peaks form.

    Add sugar very gradually, beating until stiff.

    Fold in crackers, pecans, vanilla and peaches.

    Spread over bottom and sides of greased 9-inch pie pan. Bake at 325° for 30 minutes.

    Reserve several peach slices for garnish.

    Alternate layers of whipped topping and peaches on cooled crust, ending with topping.
