Rancher Potatoes

  • 3 medium baking potatoes
  • 4 strips bacon, cut into small pieces
  • 1 red bell pepper, julienned
  • 1/2 tsp. whole comino seeds or 1/2 tsp. cumin
  • 1/4 c. Monterey Jack cheese, grated
  • 2 scallions, thinly sliced

Directions

    Boil potatoes until they are barely done.

    Cut into cubes. Saute bacon until done.

    Add bell pepper, seeds and potatoes to bacon.

    Saute until golden brown.

    Preheat oven to 375°.

    Place potato mixture in baking dish and sprinkle cheese on top.

    Heat 3 minutes.

    Sprinkle scallions on top and serve.
