  • 1 c. white cornmeal
  • 1 egg
  • 1 to 1 1/4 c. buttermilk
  • 4 tsp. baking powder
  • 1 tsp. baking soda
  • 2 Tbsp. sugar
  • 3 Tbsp. melted shortening

    Sift dry ingredients together.

    Beat egg slightly with milk. Add to dry ingredients.

    Bake in preheated oven at 425° for about 20 minutes or until golden brown on top.
