1For a 2 rib roast weighing 4 1/2 -5 lbs.

2allow 25 to 30 minutes at 500 F.

3For a 3 rib roast weighing 8 to 9 lbs.

4allow 40 to 45 minutes at 500 F.

5For a 4 rib roast weighing 11 to 12 lbs.

6allow 55 to 60 minutes at 500 F.

7Have your butcher prepare the roast by removing the chine bone and cutting the meat from the bones.

8Then return the chine bone and the meat to its original shape and tie the roast to hold it together.

9This will facilitate your carving.
