Raspberry And Yogurt Parfait

- 2 tbsp honey
- 2 tsp olive oil
- 2/3 cup rolled oats
- 2 tbsp pumpkin seeds
- 2 tbsp sunflower seeds
- 2 tbsp coarsely chopped dried strawberries
- 1 tbsp shredded coconut
- 6 oz frozen raspberries
- 2 tbsp granulated sugar
- 2 1/2 cups low-fat yogurt
Directions

1Preheat oven to 425°F. Line a baking tray with parchment paper.

2Combine honey and olive oil in a small saucepan over low heat. Cook, stirring, for 2 mins, or until combined and smooth. Stir in oats, pumpkin seeds and sunflower seeds. Transfer to prepared tray and bake for 10 mins. Let cool then fold in strawberries and shredded coconut.

3Combine raspberries and sugar in a small bowl.

4Layer granola, yogurt and raspberry mixture in 4 serving glasses, starting and finishing with granola. Serve.
