Mini Spring Roll Salad

  • 1/2 lb pack mini duck spring rolls
  • 4 tbsp olive oil
  • 2 tbsp white wine vinegar
  • 1 tsp light soy sauce
  • 1 small head frisse lettuce, leaves separated and washed
  • 1 small onion, peeled and very finely chopped
  • few None whole chives, to garnish
  • None None sweet chilli dipping sauce, to serve

    Preheat the oven to 400°F. Place the spring roll on a baking tray and cook for 15 minutes (or according to pack instructions) until crisp and piping hot.

    Meanwhile, whisk together the oil, vinegar and soy sauce and season to taste with freshly ground black pepper. Place the salad leaves and onion in a bowl and add the dressing, tossing gently to coat. Divide the salad and spring rolls between 4 serving plates. Garnish with whole chives and serve with the sweet chilli dipping sauce in small bowls.
