  • 4 (4 oz.) boneless, skinless chicken breasts
  • 1/2 c. sugarless raspberry jam
  • 1/2 c. pineapple juice concentrate
  • 1/2 c. low sodium soy sauce
  • 2 Tbsp. rice vinegar
  • 1/2 tsp. chili powder
  • 1/2 tsp. curry powder
  • 1/2 tsp. garlic powder
  • 1/2 c. fresh raspberries
  • 1/2 c. basil

Directions

    Combine all ingredients (only 1/4 cup mashed raspberries and 1/4 cup basil).

    Pour over chicken breasts.

    Refrigerate overnight or for at least 2 hours before cooking.

    Cook at 350° for 30 minutes.

    Garnish with 1/4 cup whole raspberries and 1/4 cup basil.
