Raspberry-Fig Breakfast Bar

- 13 cup figs, dried
- 1/4 cup water
- 1/2 tablespoon honey
- 1 cup whole wheat flour plus 2 tablespoons, or white flour
- 1 teaspoon baking powder
- 1/2 cup brown sugar
- 1 cup rolled oats plus 2 tablespoons
- 2 tablespoons butter, unsalted melted
- 1 large eggs
- 4 ounces raspberry jam warmed up

1FIG PUREE: Combine figs, water and honey in a saucepan; bring to a boil.

2Cover, reduce heat, and simmer 20 minutes or until softened.

3Using knife blade in food processor bowl, add fig mixture.

4Process 10 seconds or until smooth.

5Preheat oven to 250 degrees F.

6Mix all ingredients in a large bowl except jam.

7Press half of mixture into 8 by 8-inch or similar capacity baking pan well greased with butter.

8Spread warm jam evenly over bottom layer.

9Place remaining mixture evenly over jam, with back of spoon, press and smooth top layer.

10Bake 50 to 60 minutes.

11Let cool in pan completely, about 1 hour, then cut into 16 bars.
