Raspberry-Lemon Muffins

- 1/2 c. fat-free yogurt
- 3 T. oil
- 1 T. fresh lemon juice
- 2 egg whites
- 1 1/2 c. flour
- 1/2 c. sugar
- 2 tsp. bkg. pwdr.
- 1 tsp. lemon zest
- 1/4 tsp salt
- 1 c. frozen raspberries (no need to thaw)
Directions

1Combine first four ingredients, blend & set aside. Combine rest of ingredients except berries. Mix well. Stir in berries. Add wets to drys. Stir until just moistened. Spoon into muffin tins lined with cup papers. Sprinkle with sugar. Bake at 400 degrees for 14-16 minutes until tops are golden brown. Cool on rack. I make these with other fruits & nuts. Sometimes have to adjust other ingredients.
