Raspberry Lime Chicken

  • 2 whole chicken breasts
  • 2 Tbsp. margarine
  • 2 cloves garlic, crushed or minced
  • 2 Tbsp. brown sugar
  • 1 Tbsp. soy sauce
  • 1 1/2 Tbsp. raspberry vinegar
  • juice of 2 limes (3 to 4 Tbsp.)

Directions

    Halve the breasts; bone and skin.

    Flatten with hand.

    Melt butter in heavy pan over low heat.

    Add chicken; cover tightly. Cook slowly until it is no longer pink inside (approximately 5 to 7 minutes), turning once.

    Do not brown.

    Remove chicken and reserve.
