Raspberry Macadamia Crusted Salmon

Ingredients
- 4 salmon fillets
- 2 tablespoons olive oil
- 1 teaspoon fresh ginger, chopped
- 1/2 teaspoon garlic, chopped
- 1/2 cup raspberry preserves
- 2 -3 tablespoons maple syrup
- 2 -3 tablespoons soy sauce
- 2 -3 slices bacon, chopped
- 1/2 cup macadamia nuts, chopped
- 2 tablespoons lemon juice
Directions

1Preheat oven to 425.

2Combine olive oil, ginger, garlic and saute until translucent.

3Add maple syrup, jam, lemon juice and soy sauce and continue simmering for 15 minutes.

4Chop macadamia nuts finely.

5Cook bacon until cooked through, then chop finely. Mix chopped bacon with the macadamia nuts.

6Coat salmon with sauce and then put face down into the macadamia bacon mix until coated.

7Place salmon on lightly greased baking sheet.

8Cook salmon approx 15 minutes until done (based on size of fillet).

9Drizzle with extra sauce.
