Raspberry Macadamia Crusted Salmon

Ingredients

  • 4 salmon fillets
  • 2 tablespoons olive oil
  • 1 teaspoon fresh ginger, chopped
  • 1/2 teaspoon garlic, chopped
  • 1/2 cup raspberry preserves
  • 2 -3 tablespoons maple syrup
  • 2 -3 tablespoons soy sauce
  • 2 -3 slices bacon, chopped
  • 1/2 cup macadamia nuts, chopped
  • 2 tablespoons lemon juice

    Preheat oven to 425.

    Combine olive oil, ginger, garlic and saute until translucent.

    Add maple syrup, jam, lemon juice and soy sauce and continue simmering for 15 minutes.

    Chop macadamia nuts finely.

    Cook bacon until cooked through, then chop finely. Mix chopped bacon with the macadamia nuts.

    Coat salmon with sauce and then put face down into the macadamia bacon mix until coated.

    Place salmon on lightly greased baking sheet.

    Cook salmon approx 15 minutes until done (based on size of fillet).

    Drizzle with extra sauce.
