- 1 1/2 c. flour
- 1/2 tsp. baking soda
- 1/8 tsp. salt
- 1 1/2 tsp. cinnamon
- 1 c. sugar
- 1 (12 oz.) pkg. frozen raspberries, thawed slightly
- 2 eggs, beaten well
- 2/3 c. canola oil
- 1/2 c. slightly chopped pecans
Directions

1Preheat oven to 400°.

2In medium bowl, mix flour, soda, salt, cinnamon and sugar.

3Make a well in the center; stir in undrained raspberries and beaten eggs.

4Thoroughly mix in oil and pecans. Spoon batter into paper liners in muffin pan.

5Muffin cups will be full.

6Batter is heavy and will not overflow.

7Bake 15 to 25 minutes.

8Cool 5 minutes before taking from pan.
