- 1/2 c. raw oatmeal
- 2 c. plain flour
- 1/2 c. sugar
- 1 Tbsp. baking powder
- 1/4 tsp. salt
- 1 egg
- 3/4 c. skim milk
- 1/4 c. salad oil
- 1/2 pt. fresh raspberries
Directions

1Toast oatmeal in a skillet over low heat, stirring constantly. Set aside.

2Preheat oven to 400°.

3Grease 12 muffin-pan cups.

4In a large bowl, mix flour, sugar, baking powder and salt.

5In a small bowl, blend egg, milk and oil.

6Stir into flour mixture just until moistened.

7Fold in raspberries and toasted oatmeal.

8Spoon batter into muffin cups and bake 20 minutes.
