- 1 1/2 Tbsp. olive oil
- 2 cloves garlic, minced
- 2 medium onion, thinly sliced
- 3/4 lb. eggplant, peeled and diced
- 1/2 lb. zucchini, unpeeled and sliced
- 1 sweet green pepper, sliced into rings
- 2 tsp. Italian seasoning
- 1 tsp. sugar
- salt (optional)
- pepper to taste
- 4 medium fresh or canned tomatoes, peeled and sliced
Directions

1Heat oil in heavy duty saucepan, add garlic, onion, eggplant, zucchini and green pepper; saute vegetables until they are barely tender.

2Add seasoning, mixing well.

3Add tomatoes and simmer until tender, about 20 to 25 minutes.
