- 1 kg/2 1/4 pounds tomatoes, soaked in boiling water and peeled
- 3 courgettes/zucchinis
- 4 cloves garlic
- Herbes de Provence (rosemary, thyme etc)
- olive oil
- salt, freshly ground pepper and cayenne
