  • 1 eggplant
  • 1 bell pepper
  • 1 onion
  • 3 cloves garlic
  • 1 28 oz can diced or crushed tomatoes
  • Olive oil
  • Dried or fresh basil (optional)
  • Zucchini (optional)
  • Capers (optional)

Directions

    Dice all vegetables. Saute onions and garlic in oil on medium-high heat for 3 minutes, then add bell pepper and saute for additional 5 minutes. Add eggplant (and zucchini, if using) and continue cooking for about 5 minutes. Then, add tomatoes and bring to boil. Reduce heat and continue to simmer until vegetables are tender, about 15 minutes. Add herbs and/or capers (if using), and season to taste.
