  • 2 large onions, sliced thin
  • 2 cloves garlic, mashed
  • 1 medium eggplant, peeled and cut in 1/2-inch cubes
  • 6 medium zucchini or yellow squash, sliced
  • 2 large green or red sweet peppers, cut into strips
  • 4 large fresh tomatoes, peeled and chopped
  • 1 1/2 tsp. salt
  • pepper to taste
  • 2 Tbsp. fresh or 2 tsp. dried basil
  • 1/2 c. minced parsley
  • 6 Tbsp. olive oil

    Layer vegetables, sprinkling seasonings on each layer.

    Press vegetables down tightly.

    Cook on top of stove over low heat about 1 1/2 hours.
