- 2 green peppers, seeded and cut in strips
- 2 medium zucchini
- 2 medium sliced onions
- 1 peeled eggplant, cut in julienned strips
- 1/2 lb. green beans, cut
- 1/2 lb. sliced mushrooms
- 1 (8 oz.) can tomato sauce
- 2 cloves garlic
- 1/4 c. fresh basil
- 1/4 c. fresh parsley
- salt and pepper
- 1 c. shredded Mozzarella cheese
Directions

1Saute green peppers in olive oil for 2 minutes on medium heat. Layer vegetables in order over peppers.

2Cover with tomato sauce. Sprinkle parsley, sweet basil and minced garlic on top.

3Cover until there is enough juice to baste.

4Cook until tender, about 20 minutes.

5Do not disturb layers (salt and pepper each layer, if desired).

6Sprinkle with Mozzarella cheese and let melt.

7Serve like a pie.
