- 3 Tbsp. olive oil
- 1 zucchini, diced
- 1 yellow squash, diced
- 1 eggplant, diced
- 1 onion, diced
- 1 red pepper, diced
- 1 green pepper, diced
- 2 Tbsp. garlic
- 1 can tomato paste
- 1/2 c. red wine
- 1 Tbsp. chopped oregano
- salt and pepper to taste
Directions

1Saute all vegetables in oil until soft.

2Add garlic; cook 5 more minutes.

3Deglaze with red wine.

4Add tomato paste; reduce heat to low.

5Cook until vegetables are very soft.

6Stir in fresh oregano, salt and pepper.
