- 1/4 c. olive oil
- 2 cloves garlic, minced
- 1 onion, chopped
- 1 green pepper, sliced
- 3 zucchini, sliced
- 1 eggplant, cubed
- 2 tsp. basil
- 1 tsp. oregano
- dash of pepper
- 3 tomatoes, cut up
Directions

1Heat oil in a large skillet; add garlic, onion, green pepper and zucchini.

2Cook about 3 minutes until onion is tender, stirring frequently.

3Add eggplant, basil, oregano and pepper; cover and cook over medium heat for 15 minutes, stirring occasionally.

4Add tomato wedges; cover and cook 5 minutes or until tomatoes are heated.

5May be served warm or chilled.
